Southern Plains meet Northern Plains wheat. Optimized for bakers.
Field to Table
From family farms to your door with only one stop in between. Sherman, Texas.
Whatever your kitchen looks like, we’ve got you.
Maybe you grind your own berries and need a blend you can rely on. Maybe you just know that the stuff on the shelf just isn’t cutting it, and you need a healthier option. Either way, Cross Timbers Mill & Grain was built for you.
We’ll start wherever you are.
Where Do I Start?
Not sure where to start? Good. Neither was Ol’ Rob.
There’s no wrong door here. Pick the one that sounds like you.
“I just want something better for my family.”
Start with Ol’ Rob’s Pancake Mix. Add water. Cook. That’s it. Every ingredient sourced the same way we source our wheat - with the same obsessive care. No measuring, no waiting, no planning. Just a hot griddle and cool water. Even Rob couldn’t mess that up when he started. Neither will you.
“I want to bake but don’t know where to start.”
The Baker’s Starter Kit was built exactly for this moment. Shawn has been through the “why isn’t this working” phase so you don’t have to. Everything you need for your first real loaf, with a recipe guide written by someone who learned it the hard way and wants to help you fast-forward through the hard part.
“I already bake,” or “I already mill my own flour.”
Then you know what you’re looking for, and maybe already know how hard it is to find it. Our Core Blend is a proprietary two-region blend, tested batch by batch with actual bake tests, not blind measurements. Southern Plains winter wheat meets Northern Plains spring. Consistent, intentional, and milled to order.
Already baking for others?
Your flour shouldn’t be the variable.
You’ve dialed in your process. Your customers know your bread. The last thing you need is a bag of berries that bakes different every time - adjusting hydration, chasing consistency, being stuck in the small-batch loop. Nobody’s got time for that. Cross Timbers has been built with you in mind. We deliver fresh-milled, named-source whole grain flour to your door every week. Our core blend is dialed in and adjusted with every lot to ensure a consistent bake. How? Because we will bake with it long before it reaches your kitchen. Same farms. Same behavior. Same results.
Contact us directly and ask about our baker’s partnerships. Deep volume discounts, returnable packaging to reduce waste, and a co-branding story that elevates your brand.
You bake for others. We mill for you.
“The best food has always come from families - the ones who grow it, the ones who mill it, and the ones who bring it to the table. Cross Timbers is where those families meet.”
Shawn Guthrie
Co-founder & Head Baker
This is a family business. Literally.
Shawn bakes. Rob fumbled through it until he didn’t. Warren makes the waffles - his name is on the bag because he earned it. Gwenda claimed the banana bread before she could say it correctly, so we let her name that too.
The products have names because the family has names. That wasn’t a marketing decision. That’s just how it went.
Shawn is a perfectionist who sees baking as the intersection of science and art. She can taste something and call out the ingredients in near-accurate ratios. She never makes you feel like you can’t do it - because she’s been in that exact place herself.
Rob is a farm kid from Kentucky who learned to bake because Shawn needed a co-conspirator and someone had to test the pancake mix. He’ll tell you your imperfect loaf is still a win - because it is.
Together, they moved to Sherman, did the research, found the farmers, built the blends, and decided North Texas deserves better bread.
You’re not going to wonder what’s in your bread, or how the flour will bake.
Five years from now your kitchen will still be a mess. You’re still going to wonder if you’re doing enough. That’s fine. That’s everybody. But you’re not going to wonder what’s in your bread. You’ll know the farmers. You’ll know the mill. You’ll know that nothing was bleached, stripped, or sprayed with something that wilts plants in seconds. And you won’t be having to constantly adjust your recipes or compromise on yet another commercial bread brand. Our hope is that you use that extra piece of mind - and the energy that comes from a healthier gut - to take on the next thing. Maybe that’s getting your kids a better education. Maybe that’s investing in your marriage. Maybe it’s just better sleep and fewer stomachaches. We’re not your church (though we can help you find one). We’re not your doctor (good for you). We’re just the people who figured out the bread thing and want to help you do the same. Start wherever you are. We’ll meet you there.
